This is one of the most popular ways to serve prawns. For family style dishes. shrimps can be substituted. Chefs in Kwangtung province, and those in Kiangsu and Chekiang provinces have created two different styles of this dish. Methods stated below are in the latter style.
1. Remove one third of the head and tail of each prawn (about 1(1/2)1bs are needed). Cut each prawn down the back to remove entrails, then remove legs. Clean, but do not remove shells.
2. Heat 6 T. oil in frying pan, cook prawns until red (fry each side for one minute).
3. Add 1 T. wine, 1 cup of water, 1 t. sugar and salt each. Cook about two minutes, then remove.
4. Heat another 3 T. oil to fry 1 T. chopped green onion and ginger. Add 3 T. tomato catsup and stir fry about half a minute. Add prawns to sauce mixture, and cook another half minute. Add cornstarch paste, stir and fry until thickened. Sprinkle 1 T. hot cooking oil and serve.
