Scallops are loaded with protein, each 100 g. having 61 g. of protein, nutritionally roughly equivalent to 340 g. of meat. Mustard plant is high in fiber. Together the two are delightful, and the dish is highly valued in Hunan cuisine. It is easy to prepare, and worth recommending:
Ingredients:
Twelve mustard plant hearts, three scallops, 1/2 tspn soda powder, seven cups broth, one tspn salt, 1/2 tspn MSG, 1 tspn sugar, and 1 tbspn starch.
Directions:
1. Add six tablespoons of clear water to the scallops; steam for one hour.
2. Place the mustard plant hearts in boiling water. Add the soda powder; boil only very briefly. Remove the mustard plants and wash with cold water. Place in boiling broth, add the salt and MSG and boil for two minutes. Remove and set out on a plate.
3. Shred the scallops. Boil together with the broth. Add starch to thicken. Sprinkle over the mustard plant,spread evenly, and serve.
