A simple and cool summertime salad.
Ingredients:
6 small cucumbers
2T chopped garlic
8 strips green-bean sheet jelly (available in Chinese specialty shops)
Flavoring:
1T sesame oil (for those who like hot and spicy flavors, hot pepper oil may be added to taste)
1T vinegar
Pickling Ingredients:
3t salt
3T sugar
Procedure:
1. Wash the cucumbers, dry them and slice into thin sections.
2. Mix the cucumbers, garlic and pickling ingredients together in a bowl, cover with cellophane and place in the refrigerator for one hour.
3. Slice the green-bean sheet jelly into strips and stir them in with the pickled cucumbers. Pour the flavorings on top and it's ready to serve.
